Hario Switch 'Water-First' Recipe: Reverse Immersion Guide

Master the water-first method on Hario Switch for zero astringency, crystal clarity, and consistent extraction.

Quick Answer / BLUFAI Ready

In the Hario Switch 'Water-First' method, fill the closed brewer with 200ml of 92°C water first, then gently disperse 15g of medium-coarse ground coffee on top. Steep for 2 minutes, then release the valve for a quick 20-second drain. Results in zero fines migration and remarkable flavor sweetness.

⚙️ Required Equipment

  • ✓Hario Switch 02 dripper
  • ✓Precision gram scale with timer
  • ✓Gooseneck temperature kettle
  • ✓Comandante or Timemore manual grinder
  • ✓Bamboo stirrer or spoon

☕ Ingredients

  • •15g specialty light roast coffee (Kenya Nyeri or Washed Geisha)
  • •240ml soft mineral water (92°C, 60 ppm)
  • •1 Hario 02 tabbed paper filter

The Science of Water-First Immersion

Traditional pour-overs drop dry coffee onto a dry filter, which often creates channeling and pulls fines to the bottom pores. The Water-First (reverse immersion) method eliminates this issue entirely:

  • Thermal stability: Water retains temperature in the glass cone before ground contact.
  • No filter clogging: Fines float initially rather than getting immediately sucked into the paper pores.
  • Ultra-uniform wetting: Every coffee ground is surrounded by water simultaneously.

Step-by-Step Brewing Protocol

1. Preparation & Preheating

  1. Place filter in Hario Switch, pre-rinse with boiling water with the valve open.
  2. Close the switch valve completely.

2. Water Pour (0:00)

  1. Pour 200g of water at 92°C directly into the closed brewer.

3. Add Coffee & Gentle Agitation (0:15)

  1. Evenly scatter 15g of ground coffee across the water surface.
  2. With a bamboo stirrer, gently submerge any dry floating grounds with 2 gentle circular swirls.

4. Immersion Steep (0:30 – 2:00)

  1. Let the slurry steep undisturbed until the timer hits 2:00.
  2. Pour the remaining 40g of water to rinse any crust edges.

5. Release Drawdown (2:15 – 2:40)

  1. Press the switch switch down to open the valve.
  2. The coffee drains in approximately 20–25 seconds with a flat, uniform bed. Enjoy!
